In /etc/mysql/my.conf, section [mysqld] I have insert:
init-connect = ‘SET NAMES utf8’
character-set-server=utf8
collation-server=utf8_general_

ci
character_set_client=utf8

In fact is what is written here:
http://wiki.koha-community.org/wiki/Encoding_and_Character_Sets_in_Koha

Well, if I do a check on mysql with root user I see:
mysql> show variables where variable_name LIKE “character_set%” OR
variable_name LIKE “collation%”;
